To make this more complex, is it better to use the dashes or no? I know a domain is generally of better quality without the dashes but for drawing more organic traffic, which is better? With or without the dashes?

Using dashes in between the words in a domain name will not increase or decrease the organic traffic.
What you have to remember though is that using the actual domain name in some of the content of your site as a keyword is going to be easier if there are no dashes used
